Mason Dixon BBQ Recipe


ORIENTAL SPICY RIBLETS

Ingredients:

1 cup Hoisin sauce

1/3 cup white wine

1/2 cup soy sauce

1 cup white sugar

1/2 cup tomato paste

1/4 cup chopped garlic

2 tablespoons Heartbreaking Dawn's Hot sauce

2 pounds spare rib tips, or riblets

Directions:

1. Preheat grill/smoker to 350 degrees F

a. Add Cherry wood chunks to grill/smoker

2. Combine the Hoisin sauce, white wine, soy sauce, sugar, tomato paste, garlic, and hot sauce in large bowl; mix well.

3. Place the riblets in a large roasting pan and smoke, uncovered for 45 minutes, in the smoker/grill.

4. After 45 minutes, pour sauce over riblets and toss to coat.

5. Return the pan to the smoker; cook, stirring often, until ribs are tender and sauce has thickened, about 45 minutes

6. Lick your fingers

Mason Dixon BBQ Recipe


GRILLED SEAFOOD PIZZA
INGREDIENTS
  • 1 Cup of white sauce
  • 1/2 Cup cooked chopped shrimp
  • 1/2 Cup cooked chopped crab meat (pick through to remove shells)
  • 1/2 Cup cooked sliced scallops
  • 2 Cups of shredded mozzarella cheese
  • 1 Cup sliced mushrooms
  • 1/2 Cup fresh chopped tomatoes
  • Todd's Crabby Dirt
  • 16" refrigerated pizza dough
THE HOW TO…….
  1. Preheat Grill and Pizza Stone to Medium High Heat (about 525 F)
  2. On a lightly floured work surface work dough into a pizza crust
  3. Place crust onto pizza peel
  4. Brush light layer of olive oil on to crust
  5. Mix white sauce with shrimp, crab meat, and scallops
  6. Spread mixture onto crust
    1. Sprinkle on mozzarella cheese
    2. Sprinkle on sliced mushrooms
    3. Sprinkle on pinch of Todd's Crabby Dirt
    4. Sprinkle on chopped tomato
  7. Dust Pizza Stone with corn meal
  8. Using pizza peel, place pizza on stone
  9. Cook with lid closed for approximately 20 minutes
  10. To check lift one side of pizza. You are looking for the bottom to be lightly browned.
  11. Remove from grill, slice and eat.

White Sauce Recipe
  • 1 Cup milk
  • 1/4 Cup butter
  • 2 Tbsp all purpose flour
  • 1 Tbsp white wine
  • 1/4 Tsp salt
  • 1/4 Tsp white pepper
  • 1/4 Tsp cayenne pepper
  • 3-4 cloves fresh chopped garlic
  • 1/8 Tsp Todd's Crabby Dirt
  • 1/4 Cup Parmesan Romano cheese blend
Melt butter in a small sauce pan, stir in flour and add milk. Cook for 1-2 minutes add salt, pepper and cayenne pepper. Continue cooking while whisking until sauce is thickened. Remove from heat add wine, garlic, Old Bay Seasoning and cheese. Mix well allow to cool.

Mason Dixon BBQ Recipe


TACO PIZZA

1 lb. hamburger, browned and drained

o Seasoned with Sucklebuster's Southwest Steak Seasoning

2 cups Doritos, slightly crushed

1 cups pizza sauce

1 1/2 cups Wade's Favorite Garlic Salsa

1 large – 16" prepared pizza crust

2 cups shredded lettuce

1 cup diced tomatoes

2 large packages shredded cheese – three cheese Mexican blend

Sour cream

Extra salsa

1. Preheat grill to medium hot.

2. Place pizza stone on grill, close lid and let warm up.

3. In a bowl, combine hamburger, pizza sauce and taco sauce.

a. Spread over crust.

4. Top with

a. a layer of cheese,

b. a layer of Doritos and

c. another layer of cheese.

5. Open grill and lightly dust pizza stone with corn meal

6. Using pizza peel, place pizza on pizza stone in grill for 15-18 minutes until cheese melts.

7. Top with lettuce, tomatoes, and more cheese

8. Close lid, grill for 2-3 more minutes until cheese melts.

9. Remove from grill

10. Allow to cool slightly.

11. Top each slice with sour cream and extra taco sauce.
