Open Faced Grilled Skirt Steak with a Whomp
 

Ingredients
  • 1.5 - 2lbs. skirt steak
  • Olive oil
  • Denny Mikes Cow Bell Hell
  • 2Red Onions sliced
  • Crusty bread – Italian or French
    • Slice into 1 ½” slices
  • 1 Jar Mayonnaise
  • 1 Jar Meat Mitch Naked Whomp Sauce
  • Garlic spread
Directions
  1. Brush Olive Oil onto both sides of skirt steak
  2. Apply DennyMikes Cowbell Hell BBQ Rub to both sides of meat
    1. Refrigerate for 1 hour (up to 4 hrs)
  3. Combine 1 cup Naked Whomp Sauce and 2 cups Mayo to make Whomp BBQ Mayo - refrigerate.
  4. Set up grill for high/direct heat
  5. Oil grates and grill skirt steak for 3-4 mins per side
    1. To 125 degrees F (med rare)
    2. Set aside and let rest for 5 mins
  6. Place Onion slices on grill and grill along with skirt steak
  7. While skirt steak is resting apply garlic spread to one side of bread slices
  8. Place on grill spread side down and grill for 1 min until toasted – do not burn.
    1. Set aside when done
  9. After resting steak for 5 mins, slice thin against grain
  10. Stack sandwich - Bread grilled side up, a little Whomp Mayo, Skirt Steak slices, grilled Onions, drizzle again with Whomp Mayo - EAT
Note:  For added flavor add crumbled Blue Cheese or crumbled Gouda over top

Summer Symphony
 
Went out to sit and watch
the lightning roll 'cross the sky
 
Sat on the porch to relax and enjoy
and pass the evening by.
 
But the longer I sat, the louder it got
the noise was so deafening
 
I think every critter created decided
it was time to come out and sing
 
The crickets were chirpin', the locusts would chime
the bull frog joined in with three quarter time
 
The breezes were blowin', the sky lit up bright
no better way to spend a warm summer night
 
But the noise just got louder as the symphony sang
as all harmonized with a bit of a twang
 
My head was a'ringin, just buzzin with sound
as everything made noise from sky to ground
 
Enjoyable it was and I'd listen again
It was a wonderful way to wait for the rain!

Having spent so many years
 
Hiding behind my self built walls
 
I've been able to tune out things
 
Only answering certain calls.
 
 
 
It doesn't mean I have no care
 
For others who've been hurt
 
It simply means I'm cautious
 
Protecting my own worth.
 
 
 
Believing there are lessons
 
In all things, good or bad
 
I now must look within myself
 
To know why I'm so mad.
 
 
 
For people have no right
 
To end another life
 
No matter what their pain or fear
 
No matter what their strife.
 
 
 
Taking innocent babies
 
Before they're even born
 
Or killing precious children
 
Forever we will mourn.
 
 
 
This world is lost and dying
 
Full of hatred, anger and sin
 
We must begin to search
 
And look so deep within.......
 
 
 
To find out what our hearts hold
 
To seek out what we need
 
We need to find those answers
 
Making changes in word and deed.
 
 
 
The change begins in each of us
 
Love and forgiveness we must share
 
Reach out and help another
 
A burden gladly bear.
 
 
 
It's time to begin removing walls
 
Stop hiding out from others
 
Take time to lend a helping hand
 
To our sisters and our brothers.

BEER & GARLIC PEPPER STEAKS

Need:

Marinade:

 -Minced Garlic 1 tbspn
 -Beer – Stout/Brown Ale ¼ cup
 -Brown Sugar (Dark) 2 tbspn
 -Olive Oil/Corn Oil 1 tbspn
 -Worcestershire Sauce 2 tbspn

Meat:
 Sirloin Steak (thick) 24-32 oz (4 steaks)

Rub:
 1. Fresh Cracked Black Pepper
 2. Texas Rib Rangers Championship Steak Rub

Prep:
 1. Mix all the marinade ingredients together and pour into 1 gallon zip-lock freezer bag
 2. Add meat to bag and turn to coat steak(s) with marinade evenly
 3. Place in refrigerator overnight, turning it every now and then to insure even coating of
          marinade

Cook:
 1. Remove steak(s) from the marinade and place on plate or glass container
           a.Keep the marinade!
 2.Rub sirloin with olive oil and season all over with fresh cracked pepper and Texas Rib Rangers
        Steak Rub
           a. Using fingers, press pepper into steak(s)
           b. Season well, but don’t kill it!
 3. Grill – light charcoal and get grill started for offset cooking
           a. Tremendous heat on one side
           b. No direct heat on the other
 4. Place steaks directly on hottest side of grill
           a. 3 minutes per side for Rare
           b. Baste with remaining marinade while searing
 5. Remove from grill when meat is cooked to preference
           a. For medium – well done steaks, remove from direct heat after 3 minutes per side and
               finish cooking on indirect side of grill to achieve desired temp

Note: I prefer corn oil to olive oil for this particular recipe. Also, be careful when basting the meat as
the beer in the marinade will cause flare ups – don’t burn your knuckles.

"Percy Jackson: Sea of Monsters" (PG)
Logan Lerman returns as Percy Jackson, the mortal son of the god Poseidon. In this one, he and his friends undertake a mission to go into the Bermuda Triangle to find the Golden Fleece . . . which they need to save their home, Camp HalfBlood. Stanley Tucci plays the camp director Dionysus . . . Anthony Head from "Buffy the Vampire Slayer" takes over as the centaur Chiron, who was played by Pierce Brosnan in the first movie . . . and "Castle's" Nathan Fillion appears as Hermes.




"We're the Millers" (R)
Jason Sudeikis is a small-time drug dealer who gets his stash stolen. His supplier, Ed Helms, tells him that in order to set things right, he'll have to personally smuggle their latest shipment across the border from Mexico. Jason doesn't want to get caught so he gets a stripper, a runaway, and a horny virgin to pose as his family while he makes the trip. Jennifer Aniston is his stripper "wife", Emma Roberts is his runaway "daughter", and Will Poulter from the Narnia movie "Voyage of the Dawn Treader" is the kid posing as their son.




"Elysium" (R)
Matt Damon stars in this sci-fi movie that was written and directed by "District 9's" Neill Blomkamp. Elysium is a space station where the Earth's wealthiest people live in luxury as the rest of the world suffers with crime and poverty. He's desperate to get up there for a cure that can save his life, so he accepts a dangerous mission that could bring the whole system down. Jodie Foster is in charge of Elysium's security and "District 9's" Sharlto Copley is her hired killer.




"Planes" (PG)
Dane Cook stars as Dusty, a single-propeller cropduster with a fear of heights, in this new Pixar movie inspired by the "Cars" movies. Stacy Keach plays his mentor, Teri Hatcher is Dusty's mechanic, and Brad Garrett is his fuel truck. John Cleese, Cedric the Entertainer, and Julia Louis-Dreyfus are also in it . . . "Top Gun" fans will get a kick out of Val Kilmer and Anthony Edwards as a pair of fighter jets . . . and Pixar good luck charm John Ratzenberger does a cameo too.

GRILLED CHICKEN PARMESAN

Ingredients:
 - 4 chicken breasts, skinless and boneless
 - 3 Roma tomatoes, sliced thinly
 - 4-8 ounces fresh mozzarella cheese, cut into 1/4 inch slices
 - 1/2 cup Parmesan cheese
 - 2 teaspoons olive oil
 - 3 Little Pigs Traditional Memphis Rub

Preparation:
 1. Trim chicken breasts (remove excess fat) and lay each breast between
          (2) pieces of plastic wrap (or do 1 at a time in a gallon freezer bag).
 2. Using meat tenderizer/mallet, beat chicken breasts to uniform
          thickness
                a. Chicken will cook more evenly
                b. Ends won’t dry out before center is cooked
 3. Season chicken with 3 Little Pigs Traditional Memphis Rub
 4. Top one side with sliced tomato, parmesan, and mozzarella cheese
                a. As much as desired
5. Fold in ½ and seal with a toothpick or skewer
6. Preheat grill for medium-high heat.
7. Coat chicken lightly on both sides with olive oil
8. Season outside of chicken with 3 Little Pigs Traditional Memphis Rub
9. Grill chicken for 3-4 mins per side, turning only once.
10. Cook chicken to 165 deg F internal temp (6-8 mins)
11. Remove from grill.
12. Serve with salad of fresh slice tomatoes, fresh mozzarella chunks
           drizzled with olive oil, balsamic vinegar, sea salt, and fresh ground
           pepper and a side of buttered and grilled Italian bread slices.
