Open Faced Grilled Skirt Steak with a Whomp

  • 1.5 - 2lbs. skirt steak
  • Olive oil
  • Denny Mikes Cow Bell Hell
  • 2Red Onions sliced
  • Crusty bread – Italian or French
    • Slice into 1 ½” slices
  • 1 Jar Mayonnaise
  • 1 Jar Meat Mitch Naked Whomp Sauce
  • Garlic spread
  1. Brush Olive Oil onto both sides of skirt steak
  2. Apply DennyMikes Cowbell Hell BBQ Rub to both sides of meat
    1. Refrigerate for 1 hour (up to 4 hrs)
  3. Combine 1 cup Naked Whomp Sauce and 2 cups Mayo to make Whomp BBQ Mayo - refrigerate.
  4. Set up grill for high/direct heat
  5. Oil grates and grill skirt steak for 3-4 mins per side
    1. To 125 degrees F (med rare)
    2. Set aside and let rest for 5 mins
  6. Place Onion slices on grill and grill along with skirt steak
  7. While skirt steak is resting apply garlic spread to one side of bread slices
  8. Place on grill spread side down and grill for 1 min until toasted – do not burn.
    1. Set aside when done
  9. After resting steak for 5 mins, slice thin against grain
  10. Stack sandwich - Bread grilled side up, a little Whomp Mayo, Skirt Steak slices, grilled Onions, drizzle again with Whomp Mayo - EAT
Note:  For added flavor add crumbled Blue Cheese or crumbled Gouda over top
